Our first meal in the hotel was a five-course breakfast sampler. It included Mexican coffee from Oaxaca, croissants, fresh guava/mixed fruit and frozen yogurt and then three sumptuous prepared dishes – green tomato and tortilla strips with serrano sauce and fresh burrata; scrambled eggs with truffle oil and pork belly simmered for 72 hours; and brioche with raspberries, sour cream and goat cheese.

And then there’s Áperi. The restaurant sits in the heart of Dos Casas sharing dining and lobby space together with live trees, plants and natural lighting. Its name comes from the Latin word for “open.” Chef Olivier Deboise and his team deliver a gastronomic experience second to none with a focus on local, fresh ingredients.

Consider our eight-course tasting dinner; one of the best meals we’ve ever experienced:

1.) Corn and carrot foam and cream
2.) Watermelon, pickles and goat’s yogurt with lemon rind
3.) Soft shell crab with tomato powder, mustard leaf, jicama and cream of horseradish
4.) Beef tartare with local tomato, fresh pickle, mustard and tomatillos sauce
5.) Pork belly (smoked 12 hours), cilantro smoked mesquite, wild mushrooms and mandarin orange jam
6.) Fresh water trout, puree of beans, coconut milk, crispy rice, grilled apple wedge and dried apple
7.) Confit of duck with beets and a raspberry sauce
8.) Mango chips with passion fruit sorbet and almond crumble

BOTTOM LINE

A stay at Dos Casas in San Miguel de Allende is a visit to another time – but enhanced with the most sophisticated and modern comforts a traveler could want. It’s a bit of paradise in the center of Mexico – cozy guest rooms, exquisite cuisine, an attentive staff and an inspiring locale that make it hard to pack up and move on.
