DINING IN THE AIR CANADA SIGNATURE SUITE LOUNGE

The biggest difficulty one must overcome when visiting the Signature Suite lounge is deciding what to order to eat and drink. There’s a short but well thought out selection of wines including Moët & Chandon Brut. Some local wines including a Riesling from the Niagara Peninsula (who knew this existed?) are offered as well as an excellent selection of beer including Molson (of course!), Heineken, and one of my favorite Italian lagers from Birra Moretti.

In addition to an extensive list of cocktails – I tried the excellent Moskoka Maple [ginger ale, Canadian maple syrup, thyme, and lemon].

I can’t even begin to recount all of the various appetizers and entrees that were on the menu created by David Hawksworth, a highly regarded chef from Vancouver, but notable on the list were the prawn cocktail from British Columbia and the Wolfhead smoked salmon, the foie gras, the boeuf bourguignon, and a caramel salé en pot.

The chef told me he was particularly proud of his KFC, Korean Fried Cauliflower, a first for me and the kitchen will gladly prepare other small plates including a hamburger, which looked great although I was too full to sample it.

BOTTOM LINE

Beyond saying that what Air Canada has put together at the Signature Suite lounge is the best business-class dining concept in the world (and my statement is not hyperbole in the least), it’s important to note that this is part of an ongoing trend where many airlines are raising the bar in this important area.

In concert with the improvements Air Canada has made on the ground and in the air, there’s no question that a unique experience awaits the business traveler departing from or connecting via Toronto.
