Penelope, the hotel’s spa, and the Beauty Bar, share over 3,000 square feet (278 square meters) of space, and while I didn’t get a chance to try out a spa treatment, the facilities seemed welcoming and conducive to relaxing.

DINING

The hostelry hosts various dining establishments, including the Terrace Lounge Bar, a bar located in the lobby that serves drinks and small dishes; the Georgian, a formal dining area adjacent to the lobby, open for breakfast, lunch, and afternoon tea; as well as the hotel’s signature restaurant, Shuckers Oyster Bar, where I enjoyed the fish board accompaniments, which consists of the catch of the day.

The salmon and trout were both grilled to perfection and were served with Moroccan spiced fingerlings, grilled broccoli rabe, cauliflower puree, and toasted almonds. The puree was perfect for coating the fish and the rest of the sides were nothing short of delectable.

I opted for an additional side of grilled asparagus, and the chef did not disappoint. For dessert, a berry tart à la mode was simply decadent. The warm tart, filled with blackberries, blueberries, and raspberries, was the perfect counterpoint to the cold ice cream.

BOTTOM LINE

The Fairmont Olympic hotel is a storied part of the Pacific Northwest, and remains a popular destination. Come for the fame of its name, stay for everything else it offers.
