Air France to Offer New In-Flight Business-Class Menu
Air France will offer business-class passengers six new in-flight dishes by Michelin-starred Chef Michel Roth on all long-haul flights from Paris, beginning February 1, 2013. To celebrate the launch of his new menu, Chef Roth previewed the dishes onboard a Paris-Montreal flight on January 14, 2013.
Chef Roth’s new dishes include veal simmered with verbena and vegetable fricassee, and glazed duckling with rare peppercorns and citrus honey, caramelized mango and pineapple, and vegetable batonnets.
The menu will also include pollock fish with mussel broth and Menton cured lemon zest with simmered vegetables, as well as shrimp and squid with tarragon lobster sauce and red rice and baby spinach. The new menu will be served to passengers for the next eight months.
