Hilton Worldwide is introducing three new casual dining concepts at Hilton Hotels & Resorts, DoubleTree by Hilton, and Embassy Suites. The new concepts – Herb n’ Kitchen, Made Market, and Brickstones Grill – will debut in the U.S. in early 2013.

Herb n’ Kitchen, a self-service model created for Hilton Hotels & Resorts, combines gourmet items with a retail experience, while offering guests a view of the kitchen. Depending on the location, it will also include various options such as made-to-order or pre-made salads and sandwiches, and a bar or barista zone.

Created with DoubleTree by Hilton in mind, Made Market is an all-day eatery that combines a market-style aesthetic with the atmosphere of a brick oven gastro pub. The new concept will include microbrewed beer, fresh coffee, and pastries. The first Made Market will debut at the DoubleTree by Hilton Tulsa Downtown in Oklahoma, in January of 2013.

Found exclusively at Embassy Suites locations, Brickstones Grill will offer made-to-order breakfast and à  la carte lunch and dinner. Its menu will feature single or family-sized portions of American dishes, cooked in brick pizza ovens, open pit grills, and rotisseries. The restaurant will also have an open kitchen, with booth seating and surfaces composed of stone and reclaimed wood.
